The fragrant aroma and bright yellow colour of the delicate saffron strands imparts a unique flavour and golden hue to pulavs, biryanis,soups, curries, milk based desserts and sweetmeats. Pre-soak a few strands of saffron in 2-3 tsps. of warm milk 2 hours before use. Then lightly grind the soft expanded strands into a paste with a wooden spoon or preferably, mortar and pestle. Stir in some more liquid if required and add this exotic paste to the dish a few minutes before the end of cooking.
